Glad you are here to check our my Cabbage Soup Recipe! This recipe is super healthy and quick to make. It’s wonderful on it’s own or as part of a weight loss meal plan. I used to make it when I did weight watchers back in the day. Now there are many variations of this soup, I have simply modified it to my liking and you can do the same! It is still one I come back to every once and a while, especially if I am on health kick!
There are so many great things to say about this soup. Because it is all vegetables, you can literally fill your boots with as much as you want! Its also very versatile by way of the spices and vegetables that you decide to use. You can change it up as much as you want! There is also no right or wrong way to make this soup. You can use more or less of your favorite vegetables and seasonings. This is simply how I like it.
Now you might be thinking, it’s summer and I don’t want to eat soup! That’s a valid point and here is what I do. Since this soup makes a large batch, I separate them into smaller portion sizes and freeze them. In the summer, I like to add a cup of soup to my meal as to help fill me up with the good stuff! Because there is only a cup, it rarely becomes an issue of it being to hot to eat soup!
Let’s get to the recipe. Here is what you will need to make this Cabbage Soup Recipe.
- 6 cups beef bouillon (I prefer low salt)
- 1 can dices tomatoes
- large head of broccoli
- 1 large carrot
- 1 celery stock
- large handful of green beans
- 1 bag coleslaw – about 4 cups (I like the broccoli, brussel sprout, nappa cabbage, carrot mixture myself)
- 1 large or 2 small zucchini
- 1 onion
- 2 bay leaves (if possible, use full leaves to help make finding and removing them easier)
- 1 tsp basil
- 1 tsp parley
- 1 large or 2 small bell peppers
- 2 cloves of garlic
- Sriracha powder (as much or as little as you wish)
- salt and pepper to taste
Combine all the ingredients into a large pot and bring it to a boil.
Once boiling, reduce the heat and simmer for about 30 minutes.
Remember to remove the bay leaves before serving.
Place in a bowl or cup and enjoy! Have it as a meal itself with a roll or crackers or add it as an appetizer to your supper. A bowl full of yummy goodness!!!
Don’t forget, you can absolutely freeze the soup to pull out at a later date!
