Cucumber Grape and Dill Salad is a simple and delicious meal idea that is perfect for when summer weather is too hot for comfort. I know that when the temperature is soaring, I have no motivation to be cooking over a hot stove!
This summer salad is fresh and delicious and will leave you wanting more! Where we live, there is wonderful greenhouse where they grow pesticide free vegetables in both soil and through hydroponics and let me tell you, if there is one near you, it is WORTH EVERY PENNY! It is a little more expensive however other then the obvious, it taste better, it last twice as long as the vegetables you buy at the grocery store!
I got this “recipe” just watching my mom make it. I am not even sure if we can call it a recipe since she was just kinda throwing things into a salad bowl without measuring a thing. She simply uses what she has in the fridge at the moment so clearly there is no right or wrong way to make this salad. As I watched her add things like beets, grapes and pickles, I sat there, a little stunned and determined there is NO WAY this would taste good together!
I was right, it didn’t taste good… it was SCRUMPTIOUS! I have modified it to what my family eats, my husband in not to keen on pickles or beets and it has become a regular in our house as we have it a few times a week! Doesn’t it look TASTY!!!
Here is a list of ingredients that I used for this Cucumber Grape and Dill Salad!
- spring mix lettuce
- leaf lettuce
- cherry tomatoes
- purple grapes
- fresh dill
- a handful of mixed nuts (walnuts, pecans, almonds)
- sharp cheddar
- ranch dressing
So I used 2 different types of lettuce in this case, but it is absolutely wonderful with your favorite type of lettuce. There was no measuring, I simply filled up our favorite salad bowl.
I threw in 7 cherry tomatoes, 2 small cucumbers, a handful of purple grapes, a handful of nut pieces, 3 sprigs of fresh dill weed and then shredded in some freshly grated sharp cheddar!
Add in your favorite dressing, I use Ranch, however, my mom uses a blue cheese dressing and she loves it, I am just not a fan of blue cheese!
I am guessing that I probably used about 1/4 cup of dressing for my extra large salad bowl. Again, add as little or as much as you like!
My mouth is watering just thinking about it and I just had a bowl full. It’s very safe to say that there is never any leftovers in this house when I make this one!
On another note, I have also used apples in the salad along with grapes and the other ingredients and it was equally fabulous! Go ahead and add sesame seeds or peanuts if you like!
