Vegetarian Frittata

Serves: 4-6 servings
  • 1 dozen eggs
  • 2 cups vegetables (I used bell peppers)
  • ½ cup cheese (I used mozzarella)
  • ½ tsp salt
  • ¼ tsp pepper
  1. Preheat your oven to 350 degrees.
  2. Cut up your vegetables into small pieces. I used 10 mini sweet bell peppers.
  3. Beat 1 dozen eggs in a large bowl.
  4. Add salt and pepper to taste. This could easily be substituted for your favorite spice blend.
  5. Add your cut up vegetables to the egg mixture and mix well.
  6. Transfer it into a square 9x9 baking dish.
  7. Add the cheese to the top of the Fritatta.
  8. Bake for approximately 35 mins.
  9. Remove and ENJOY!
