Quick & Easy Creamy Vegetable Soup

  • 2 broccoli heads
  • 2 green bell peppers
  • 1 red bell pepper
  • 10 carrots
  • 7 green onions
  • 1 potato
  • 2 garlic cloves
  • 6 cups chicken broth
  • 6 cups water
  • 1 tbsp parsley
  • 1 tbsp basil
  • 1 tsp celery seed
  • 1 tsp salt
  • 1 tsp Goya Adobo All-purpose spice
  • 2 tbsp butter
  1. Wash and cut up all of the vegetables that you are going to be using and place them in a large pot.
  2. Add in the broth and water.
  3. Add your liquids and spices to the pot and bring to a boil.
  4. Let boil until the vegetables are soft enough to puree. I like to let it simmer for 30-45 minutes so that the flavors marry together!
  5. Time to puree your soup. I prefer to use a hand blender and I do it right in the pot.
  6. Once you have pureed the soup, add some butter to give a creamy texture.
  7. Enjoy or freeze for later use!
