Mom's Carrot Cake Recipe with Cream Cheese Icing

Ingredients
  • Cake:
  • 2 cups white sugar
  • 1 cup crisco (lard)
  • 3 eggs
  • 1 cup grated carrots
  • 1 tsp vanilla
  • 1 tbsp miracle whip salad dressing
  • 2 cups flour
  • 1½ tsp cinnamon
  • 1 tsp salt
  • 2 tsp baking soda
  • ICING:
  • 4 oz softened cream cheese
  • ½ cup softened butter
  • 3 cups icing sugar
  • 1 tsp vanill
Instructions
  1. Preheat the oven to 325⁰C.
  2. Combine the sugar, crisco, eggs.
  3. Once combined, add in carrots, vanilla and Miracle Whip salad dressing and mix well.
  4. Add flour, cinnamon, salt, baking soda and beat well.
  5. Place in the preheated oven and bake for 30-40 minutes.
  6. I verified this cake at the 30 minutes point and it was ready.
  7. You will want the internal temperature to be 200⁰F.
  8. Icing:
  9. Beat ingredients until well combined and smooth!
