Laura’s Pancake Recipe

Happy Hump-day everyone!

This post is all about a FABULOUS, from scratch pancake recipe, called Laura’s Pancake Recipe. It is one that I have been using for MANY MANY years! You might be asking yourself, “Who is Laura?” at this point since that isn’t my name. The answer is, I have no idea who Laura is! I acquired a cookbook from our church named Let’s Break Bread Together, many years back and that particular recipe is called Laura’s Pancakes, therefore I am giving credit where credit is due!

I love this recipe because is makes the fluffiest, yummiest pancakes in the world! I like that they are not too sweet and easy to make for Sunday brunch. I love to couple it with a fruit salad, filled with your favorite fruit and a big cup of Joe!

Here is the recipe…

Laura’s Pancake Recipe (see full printable recipe below)

  • 1 cup milk
  • 2 tsp sugar (can be omitted and still produce a wonderfully delicious pancake)
  • 2 tbsp butter (melted)
  • 2 eggs
  • 1 cup flour
  • 2 tsp baking powder
  • pinch of salt

Combine all the ingredients and mix well. I like to use beaters but doing it by hand works fine, just note that it will yield a slightly lumpier batter. Once well mixed set aside.

Preheat your frying pan and spray with non-stick spray or a small amount of butter. I like to use a 2 sided frying pan so I can easily flip the pancakes!

Add your batter to the pan, and wait until the batter begins to bubble!

Once this happens, it is time to flip! Each pancake will take about 3-4 minutes to cook.  Look at the golden disks of perfection!

I think one of the reasons that I love this recipe is that I like when pancakes are soft and spongy. Keep in mind, if you add butter to the frying pan, it may make the outer edges of your pancake crispy. I prefer to use cooking spray to avoid that!
