Marinated Pork Loin Recipe

Happy Sunday Everyone!

Today’s post is going to consists of a Marinated Pork Loin recipe that we love and use often. The wonderful thing about this recipe is that it makes multiple meals which is always a plus! We are only cooking for two so there is always plenty of leftovers for the following day, often it finds its way into a yummy finger licking sandwich!

First, we will start with the marinade. We like to marinade it for 24 hours but sometimes that just doesn’t happen, and that is fine! No worries, it will still be delicious! So here is all the ingredients that you will need.

Ingredients needed for Marinated Pork Loin Recipe

Preheat your oven to 350°F (175°C). We start with the dry marinade ingredients. Parsley, Goya Adobo Spice (which can be found in the multicultural section at your grocery store), Steak spice (we used a local brand called Bull Shit!), Tex Mex spice, Table Blend Mrs. Dash.

Now you are ready to prepare the pork loin.

We cut the pork loin in half because of the size of our family. Please note that for a large pork loin, you should double the marinade for best results. Once cut, place it into a roasting pan or dish and poke holes all over it with a fork.

Now for the messy part! Pour the marinade all over the pork loin and rub it all over, ensuring that the marinade gets on the top, bottom and both sides of the pork loin.

Now you are ready to place it in the oven. Cook it according to weight until the internal temperature reaches above 71°C (160°F). Ours cooked for approximately 90 minutes

We added some green beans this time but any vegetable works for this meal.

What did we do with the other half you ask? We place it in a large freezer bag with the marinade and put it in the freezer for another meal! The great hing about this is that the marinade is working while the meat is freezing and then it continues to marinate during the thawing process as well.
