Mom’s Carrot Cake Recipe with Cream Cheese Icing

Mom’s Carrot Cake with Cream Cheese Icing is one that creates a cake that is moist, light and fluffy. This is the one carrot cake recipe to end all carrot cake recipes! Oh, and I need to mention, SO DELICIOUS! The cream cheese icing is also so quick and all kinds of sweet yumminess. There is only ONE PROBLEM! I can’t seem to perfect it!

This carrot cake recipe is one that my mother-in-law would make on special occasions, which was on the regular! This is my second attempt to make this cake and I have yet to master it, as she did, but I will keep making it until I too can perfect it! My husband graciously accepted to be my guinea pig! I will be following the recipe to a tee, so cross your fingers and let’s hope things work out!!! 

Here is what you will need for this recipe.  (See full printable recipe at the bottom of my post)

  • 2 cups white sugar
  • 1 cup crisco (lard)
  • 3 eggs
  • 1 cup grated carrots
  • 1 tsp vanilla
  • 1 tbsp miracle whip salad dressing
  • 2 cups flour
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 2 tsp baking soda

Preheat the oven to 325⁰C. Combine the sugar, crisco, eggs.Once combined, add in carrots, vanilla and Miracle Whip salad dressing and mix well.

Add flour, cinnamon, salt, baking soda and beat well. This batter turned out quite thick so no worries.

Place in the preheated oven and bake for 30-40 minutes. I verified this cake at the 30 minutes point and it was ready. You will want the internal temperature to be 200⁰F.

It came out golden brown and looking great! I AM SO EXCITED!!! It looks awesome! This actually might work. Now to make the Cream Cheese Icing!!!

The Cream Cheese Icing consists of 

  • 4 oz softened cream cheese
  • 1/2 cup softened butter
  • 3 cups icing sugar
  • 1 tsp vanilla

Beat ingredients until well combined and smooth!

For some reason, the icing became smooth but thick! Hmmmmmm! Wondering why??? Bakers unite…HELP!?!? Why is not light and fluffy?

Looks good but I have to admit, it doesn’t look at fluffy as it does when my mother-in-law makes it!

After a taste test, there is no doubt that it was pretty tasty. It was not, however, as tasty as when she makes it! We all know what that means…that’s right! I’ll have to try again another time!

Any pros out there who can help me find out what I am doing wrong???

Ingredients
  • Cake:
