The BEST Soft Peanut Butter Cookie Recipe

If you were given the option for a soft and chewy cookie or a crumbly one, which one would you prefer? If you answered crumbly, this post won’t be helpful, BUT if you answered soft and chewy, this is the recipe for you!

I came across this recipe on Pinterest from a blog called Rachel Schultz on Homemaking. She, and now we, have discovered the yummiest, chewiest, softest peanut butter cookie recipe ever! They are truly delightful and moist!

The BEST Soft Peanut Butter Cookie Recipe is quick and easy! No fancy ingredients, just all kinds of goodness! Just look at the cookie batter! It looks yummy enough to eat raw (but please don’t, there are raw eggs in it after all).

Here is the recipe.

The BEST Soft Peanut Butter Cookie Recipe (for printable recipe see below)

  • 1/2 cup butter, softened
  • 1 cup peanut butter
  • 1/4 cup sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tablespoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 and 1/2 cups flour

Preheat oven to 350 degrees. Combine the softened butter, peanut butter, sugar, and brown sugar together in one bowl. Once it is all combined, add the egg and vanilla and continue to mix. Using a separate bowl, stir together the baking soda, salt, and flour. Slowing add in the dry ingredients, one cup at a time, while continuing to mix. Using a tablespoon, create dough balls and arrange on a lined baking tray. Slightly flatten each ball of dough with a fork. Bake for 8-9 minutes. Try to let them cool before devouring!

As you can see, I have taken great care in measuring out and creating the dough balls on the stone baking tray (harhar). This batch made roughly 36 cookies.

I then took a fork and pressed the cookie dough down.

Pop the into the preheated oven and Voilà, PEANUT BUTTER COOKIE PERFECTION.

Transfer them onto a cooling rack until they are cooled enough to munch! I stored mine in a plastic storage container and they did beautifully! They just didn’t last very long in this house
