Vegetarian Frittata

We all have those “what should we make for dinner?” moments and today, it should be Vegetarian Frittata! It’s inexpensive, delicious and very versatile. A triple threat if you ask me. It is so versatile that it can be considered a breakfast, lunch or dinner meal! It is also a recipe that you can customize according to your favorite spices! Let’s get right to it…Vegetarian Fritatta

This is what I used for this recipe: (See full recipe below)

  • eggs
  • bell peppers
  • salt & pepper
  • cheese

First, you will want to chop up the vegetables into small pieces. This time I used about 10 mini sweet bell peppers. I have had great success with broccoli, cauliflower, carrots and mushrooms as well! SO YUMMY!

The vegetables should be small so that they will cook quickly while the Vegetable Frittata is cooking.

Next, you will beat a dozen eggs and add your spices. In this instance, I only used salt and pepper to season my Frittata. This is one of the fabulous things about this recipe. You can literally add any of your favorite spices to it!

Now add your vegetables to the egg mixture and transfer it to a square 9 x 9 baking dish. This could very easily be baked in a larger dish, for a large group. You will simple need to adjust your baking time accordingly.

Once you have the egg mixture in your baking dish, smother it with your favorite cheese! I used mozzarella this time, because, it is what I had on hand. Be creative with it. Think of all the super delicious variety of cheeses out there. I can confirm that Havarti, Monteray JackMarble Cheddar and of course Mozzarella are ALL WINNERS in this recipe!

Vegetarian FritattaIT’S TIME TO BAKE! Place the Vegetarian Frittata into the preheated oven and bake for approximately 35 minutes. Remember that not all ovens are created equally, so it’s a good idea to begin checking at the 28-30 minute mark to be sure!

Make sure it passes the toothpick test (it should come out clean) or use a food thermometer to confirm it is cooked through.

The universality of this dish is quite impressive. Bacon or ham can be added to beef up the protein (see what I did there :P). Pair it with a salad and it makes a beautiful dinner option.

I love that it is quick, easy and inexpensive.

Serves: 4-6 servings
  • 1 dozen eggs
  • 2 cups vegetables (I used bell peppers)
  • ½ cup cheese (I used mozzarella)
  • ½ tsp salt
  • ¼ tsp pepper
  1. Preheat your oven to 350 degrees.
  2. Cut up your vegetables into small pieces. I used 10 mini sweet bell peppers.
  3. Beat 1 dozen eggs in a large bowl.
  4. Add salt and pepper to taste. This could easily be substituted for your favorite spice blend.
  5. Add your cut up vegetables to the egg mixture and mix well.
  6. Transfer it into a square 9x9 baking dish.
  7. Add the cheese to the top of the Fritatta.
  8. Bake for approximately 35 mins.
  9. Remove and ENJOY!
