Zucchini & Mushroom Chicken

Zucchini & Mushroom Chicken was the new recipe I decided to try for today’s post and man, am I glad I did! This one is a keeper! It is quick, easy to follow and DELICIOUS! I found the recipe on Pinterest after searching for the ingredients chicken, zucchini and mushrooms! The original recipe came from dinnerthendessert.com. I made a few minor modifications to suit us and it was definitely a treat for the taste buds!!!

Zucchini & Mushroom Chicken

So let’s get right to it (See full recipe below)

Cut the chicken and vegetables into bite size pieces. Place the chicken, that I coated with flour, in the frying pan with the stir fry and sesame oil. This was a modification that I made. The original recipe calls for cornstarch instead of flour and canola oil, but, I have a corn allergy, therefore, these 2 ingredients are on the NO WAY list so I opted for a yummy stir-fry oil with ginger and garlic flavors and flour for the chicken. Any oil would work in this case. Saute your chicken until it is browned on all sides and cooked through. I added about 2 tbsp of the sauce at this point to let some flavors get into the chicken.

Once the chicken is fully cooked, remove it from the pan and set aside. I placed the chicken on some paper towels to remove the extra oils that remained on the chicken. Now it’s time to place the vegetables in the pan. Add the zucchini, mushrooms, and garlic into the frying pan and saute these for about 5 minutes. Please note that the original recipe calls for some ginger which I have omitted.

Once the vegetables are cooked, return the chicken to the pan and combine.

Add in the sauce and stir it until it’s well combined, about 2 minutes.

Serve over rice and add sesame seeds as a garnish.

I served ours on white Basmati rice because I am not a fan of brown rice but, by all means, I am sure it would be fabulous!

Ingredients
  • 1 pound boneless skinless chicken breasts, cut into bite sized pieces
  • 3 tablespoons flour
  • 1 tablespoon stir-fry oil (any oil will work here)
  • 1 tablespoon sesame oil
  • 1½ cups mushrooms, sliced
  • 2 medium zucchinis
  • Sauce:
  • ¼ cup soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons sugar
  • 3 garlic cloves, minced
  • sesame seeds, for garnish (optional)

Instructions
  1. Toss the chicken with flour.
  2. Heat the stir-fry and sesame oil in the pan.
  3. Add chicken and cook on medium-high until browned on both sides. Add 2 tbsp of the sauce mixture to add flavor.
  4. Remove chicken from the pan and set aside.
  5. Add in the mushrooms and zucchini and cook until they start to brown.
  6. Add the garlic and ginger and cook for another 2-3 minutes as vegetables soften a little.
  7. Add the chicken back in and stir.
  8. Add in the soy sauce, sugar and rice wine vinegar and combine.
  9. Let simmer to join all the flavors.
  10. Serve on your rice of choice.
